One of the main goals of state policy is to insure high quality of life for the population. The aim of the paper is to find out how the consumption of selected food groups influence self-perceived health of inhabitants of the Slovak Republic (SR) and to quantify the force of influence the demand determinants for selected food groups. In respect to the aim of this paper, data from the database Datacube and from the Statistical office of the SR about consumption of inhabitants of the SR in years 2005 - 2020 of selected food groups were included in the analysis. The selected food groups were meat; milk and dairy products; cereals; fruits, vegetables and legumes. Data analysis was performed by regression and correlation analysis. Self-perceived health as an important indicator of the quality of life of the population depends on many factors. In this paper, we wanted to find out what effect have the dietary preferences of the SR inhabitants on this indicator. To understand consumer preferences, we also dealt with a detailed analysis of the structure of food consumption in individual food groups. From the group of meat, the inhabitants of the Slovak Republic prefer pork the most. From the group of cereals, for example, wheat. The results of the quantitative analysis of demand for selected food groups showed that the price of food and consumer income have a statistically significant effect on food demand. The coefficients of price elasticity ranged in the interval (-0.08; -0.88), which indicates inelastic consumer behavior. The coefficients of income elasticity (-0.31; 0.40) showed that consumers reacted also inelastically to the change in income. The results of the regression analysis showed that a higher percentage of the population of the Slovak Republic evaluates their health as good if they consume more fruit, vegetables and nuts and milk and dairy. As meat and cereal consumption increase, the percentage of the population who are dissatisfied with their health is increasing. The preferences of consumption confirms the above.
